The step-by-step recipe

Day 1 morning: cocoa shortcrust pastry

The shortcrust pastry is prepared the day before. It needs to rest in the fridge before baking.

1. Mix the dry ingredients. In a bowl, combine the flour, icing sugar, almond powder, cocoa, and a pinch of salt.

2. Rub in the butter. Add the cold butter cut into small cubes. Rub between your fingers until you get a texture similar to breadcrumbs. You can also use a stand mixer with the paddle attachment for faster results.

1. Melt the chocolate. Break the milk chocolate into pieces in a large bowl. You can also melt it in a double boiler for more control.
