Almond Shortbread Dough
- 250 g flour
- 90 g icing sugar
- 30 g almond powder
- 140 g soft butter
- 1 whole egg
- 1 pinch of salt
Vanilla Whipped Ganache
- 330 g whole liquid cream (30% min.)
- 130 g quality white chocolate
- 1 vanilla bean
- 2 sheets of gelatin (4 g)
Red Fruit Decoration
- 100 g strawberries
- 100 g raspberries
- 50 g blueberries
- A few redcurrants
- Meringues and macarons (optional)
- Fresh mint leaves
Essential equipment
No need to invest in professional equipment. Here's what's essential:
- 1 electric mixer or stand mixer
- 1 piping bag fitted with a 16mm plain round nozzle
- 1 number template to print on A4 paper (or A3 for more servings)
- 1 baking sheet + parchment paper
- 1 rigid presentation support (wooden board, thick cardboard)
Don't have a plain round nozzle? A 14 or 18 mm round nozzle will do the job just fine.
The step-by-step recipe
Step 1 — The whipped ganache (to be made the day before)
Start with the ganache. It needs at least 4 hours in the fridge, ideally overnight.
- Rehydrate the gelatin in cold water for 10 minutes.
- Heat 80 g of liquid cream with the split vanilla bean. Let it infuse for 5 minutes off the heat in the saucepan.
- Pour the hot cream over the chopped white chocolate. Mix until smooth.
- Squeeze out the gelatin and add it to the still warm mixture.
- Add the remaining 250 g of cold cream. Mix, then cover with cling film, touching the surface.
- Refrigerate overnight.
Step 2 — The almond sweet pastry
- Whisk the soft butter with the icing sugar until creamy.
- Add the whole egg, mix well.
- Incorporate the flour, almond powder, and salt.
- Form a ball, wrap it in film, and refrigerate for 1 hour.
- Roll out the dough to 4 mm thickness on parchment paper.
- Place your A4 number template over it. Cut out the same number twice with a knife.
- Bake at 170 °C (340 °F) for 12 to 15 minutes. The biscuit should be lightly golden.
- Let cool completely before handling. The biscuits are fragile when hot.
Baking tip: slide the cut numbers into the freezer for 15 minutes before baking. The dough holds its shape better.
Step 3 — Assembly
- Place the 1st biscuit on your final support. Do not move it afterwards.
- Whip the ganache with a mixer. It should be firm but soft, like whipped cream.
- Fill the piping bag fitted with a plain round nozzle.
- Pipe regular dots around the entire outline of the number, then fill the inside.
- Add a few red fruits between the ganache dots.
- Place in the fridge for 10 minutes to set slightly.
- Place the 2nd biscuit on top. Press very gently.
- Pipe the whipped ganache again on top.
- Decorate with fresh red fruits, meringues, and mint leaves.
- Refrigerate until ready to serve.
How to make a number cake without a mold
No need to buy a number-shaped mold. Here's the simple method:
- Print the desired number in large format on an A4 sheet.
- Cut out the paper template neatly.
- Place the template on the rolled-out dough.
- Cut around it with a pointed knife.
This technique works for all numbers, from 0 to 9. For a larger size, use an A3 sheet or assemble 2 A4 sheets.
Can I make a number cake the day before?
Yes, and it's even recommended. Here's how to organize your schedule over 2 days.
The day before:
- Make the whipped ganache → refrigerate overnight
- Prepare the sweet pastry → rest 1 hour, bake, cool completely
- Store the biscuits at room temperature, under a clean cloth
On D-Day:
- Whip the ganache with an electric mixer
- Assemble and decorate
- Refrigerate until serving time
Tip: place the baked biscuits on a wire rack. Avoid airtight containers that can soften the sweet pastry.
Which red fruits to use?
Strawberries, raspberries, blueberries, redcurrants, blackberries: all red fruits work well. Here are some practical tips:
- Strawberries: cut in half. Whole, they tend to slide when cut.
- Raspberries: leave whole. You can add a hint of red fruit coulis inside — it's more indulgent.
- Blueberries and redcurrants: use to fill the spaces between larger fruits.
- Out of season: use frozen red fruits, defrosted in advance on absorbent paper. Do not cut strawberries too early — they release a lot of water.
How to pipe successfully
Piping can seem daunting. In reality, it's about consistency.
- Hold the piping bag at 90° (perpendicular to the biscuit).
- Apply constant pressure, without moving your hand.
- Release pressure before lifting the nozzle to get a clean dot.
- Always start with the outer edge of the number.
If the ganache is too soft, put it back in the refrigerator for 15 minutes before trying again.
How to transport a number cake
The number cake is fragile. These precautions are simple and effective:
- Assemble the cake directly on the final serving support — it's impossible to move it afterwards.
- Choose a rigid and flat support (wooden board, thick cardboard).
- Transport flat in the trunk, well-secured.
- Do not add delicate decorations (meringues, macarons) before transport. Attach them at your destination.
Mistakes to avoid
The ganache doesn't whip. The liquid cream wasn't cold enough. Place the bowl and whisk in the freezer for 15 minutes before beating.
The biscuits break. They were still hot when handled. Always wait for them to cool completely before working with the dough.
The cream sags. The assembly was done too soon after piping. Put the cake in the fridge for 10 minutes between the 2 layers.
The fruits release water. The strawberries were cut too early. Prepare them at the last moment, just before serving.
